I’ve been asked for this recipe a few times and I totally keep forgetting to email it out so I decided to make it into a post instead. This cake has been our traditional birthday cake since I was little and we all adore it. Who wouldn’t? It’s called Triple Chocolate Cake but it really has four kids of chocolate in it. Not only is it the most decadent, yummiest cake in the world, but it is super easy to make. (Do not be intimidated by the number or nature of the ingredients above!)
I’m sure you are wondering what the title of this post has to do with cake, aren’t you? If you ask my girls, one of the best things about this cake is it usually has lottery tickets in it. We grew up with spare change in the cake, which eventually turned into dollar bills which led to lottery tickets. Who wouldn’t like to win a million dollars on their birthday? (Let me clarify for the germ police that the money and tickets were always wrapped in foil and inserted after the cake was baked!)
Last year Kate wanted to me to bring this cake to her preschool class on her birthday. Somehow I didn’t think the other parents would appreciate me introducing their children to gambling.
Triple Chocolate Cake
1. Preheat oven to 350 degrees. Grease bundt pan and dust with cocoa powder.
2. Combine all ingredients except chocolate chips. Beat on medium speed until smooth (about 2 minutes).
Stir in chocolate chips.
3. Bake until tester is clean, about 60 minutes. While you wait for the cake to bake, wrap 16 lottery tickets in foil.
4. Before inverting the pan, slide the foil packets into the bottom of the cake. One per slice.
5. Cool in the pan for 5 mintues. Invert onto a cooling rack and let rest for one minute before removing the pan.
After cake is cool dust the top with powdered sugar. (If I was a better cook I would frost it with chocolate frosting but that just never turns out for me!)
